Undhiyu is a Gujrati mixed vegetable dish, regional speciality of Surat.It is a perfect recipe to enjoy winter vegetables.It is very nutritious and tasty.Actually it is a one pot meal because it has all types of vegetables like root vegetables,green vegetables and leafy vegetables.Muthia is made with gram flour ,so it is full of vitamins,minirals,carbs and awesome dish!I love it!

Heat oil in a karahi,deep fry potato, sweet potato, brinjal and yam.Keep it aside.

Steam French beans and peas in a cooker.(Only one whistle)

For the muthia - mix gram flour,wheat flour, semolina,baking soda, Fenugreek leaves and all the spices, jaggery and lemon juice.Add 2-3 tb.spoon.water to make a soft dough.

Make small lemon size balls from the dough.Deep fry them on a medium flame until golden brown.

Now heat 3 tb.spoon.oil in a karahi,add mustard seeds,cumin and asafoetida.Saute.Add tomato puree and cook for 6-7 min.

Mix peanut, sesame powder, coriander leaves,salt,red chilli powder, turmeric powder.Add this mixture into tomato puree.

Cook it for 3-4 min.Add all the vegetables,muthia and hot water and cook for 5 min.Switch off the gas.

Your delicious Undhiyu is ready to serve.Serve it hot with rice or Puri.
