Cook the chicken breast.

Once cooled, shred finely. Set aside. Remember to save the broth for a soup.

Cook the tomatillos, garlic, onion, and peppers until well cooked. Let cool, then blend with cilantro, salt or bouillon, and cream.

Heat the oil and pass the tortillas through the oil without browning them. Place on absorbent paper.

Fill each tortilla with the chicken, fold, and serve three or four per person.

On the plate, place a layer of refried beans, then the enchiladas, cover with sauce, sprinkle with cheese, and bake until the cheese melts.

Serve with onion slices.
