First, roast the tomatillos and serrano peppers on a griddle or skillet until charred. Once they look like in the photo, boil them for 10 minutes and add salt.

Cut the bacon into small pieces and cook in a skillet with oil until crispy.

Once the bacon is done, add the beef (cut into small pieces) to the same skillet. Season with black pepper, salt, and paprika to taste.

In a blender, combine the cooked tomatillos and peppers, add 1/2 cup of the cooking water, and set aside the rest of the water for later. Add fresh cilantro, salt, and pepper to the blender and blend to make a sauce. The sauce should be somewhat thick; use the reserved water to adjust the consistency if needed.

I like the onion this way: Cut the whole onion into large cubes and sauté in oil until cooked through, then set aside.

In a pot, combine the beef and bacon, add the reserved cooking water plus 4 1/4 cups water (about 1 liter), and pour in all the sauce.

Bring to a boil, stir, and it's ready.

Separately, I had beans cooking to add when serving. If you like, serve with beans, but the meat is also delicious on its own.

When serving the carne en su jugo, top with the sautéed onion and fresh cilantro. Honestly, that's all you need!
