Ingredients

35 minutes
3-4 persons
  • For Achaar masala
  • 2 tspfennel seeds
  • 2 tspcoriander seeds
  • 1.5 tspcumin seeds
  • 1/4th tsp Nigella seeds
  • 20-25black peppercorns
  • 4-5cloves
  • 1/4th tsp Fenugreek seeds
  • For making khatta meetha amla achaar
  • 45 mlmustard oil
  • 1/4th tsp Nigella seeds
  • 1/2 tspfennel seeds
  • 12-14amla (steamed and chopped)
  • As Per TasteSalt
  • As Per TasteBlack salt
  • 1/2 tspturmeric powder
  • 1/2 tspred chilli powder
  • 1/2 tspkashmiri lal mirch
  • 2 tbspprepared achaar masala
  • 1/4th tsp grated ginger
  • 7mounds of jaggery (chopped)
  • 2 tspgranulated sugar

Steps

35 minutes
  1. 1

    Steam the amla for 10-12 minutes. Let it cool.
    Next take a kadhai, saute the whole spices until it's aromatic.
    (I haven't added Fenugreek seeds in the masala but you certainly add them.)

    Let the whole spices cool down.

    Grind the dry roasted, whole spices into a fine powder.
    Next chop the amla into pieces. Keep aside.
    Next heat a kadhai with oil.
    Splutter nigella seeds and fennel seeds.

    Now add the amla in the kadhai.
    Put salt, black salt, turmeric powder, and red chili powder. Add Kashmiri Lal Mirch for nice colour. Mix and saute for some time.

    Next, add the prepared achaar masala powder. Mix and continue sauteing.

    Next, add chopped jaggery to the sauteed amla.
    Keep the heat very slow.
    Jaggery will melt.

    As flavours combine and the consistency becomes thick, add in grated ginger and granulated sugar.
    Let the sugar dissolve.
    Stir and mix gently.
    It's ready!!
    Switch the flame off.

    Let the achaar settle down and cool.
    As days pass by the achaar's taste will turn from better to best.
    So do try the recipe!!

    Store the achaar in a glass or porcelain container and be careful against water for a long shelf life.
