Chole Paneer Methi Malai is a delicious and unique North Indian style recipe of nutritious Chickpeas( Chole) cooked with protein rich Paneer (Indian Cottage Cheese) and Fenugreek ( Methi ) leaves. The season change brings a variety of vegetables to our plate.One such winter vegetable is methi or fenugreek leaves. Not only it makes a dish flavourful but it is rich in essential nutrients. Adding malai or fresh cream and tomatoes make the gravy rich, creamy and tangy.This restaurant style aromatic side dish is a filling and healthy curry which can be served with bhature,roti,paratha, naan, tandoori roti , jeera rice or pulao ideal for parties or for a special meal on any day of the week.

Soak chickpeas overnight in warm water. Next day drain and wash chickpeas.Pressure cook with 2 cups water, baking soda,bay leaf,whole garam masala,dry red chilli and peppercorns. Pressure cook upto 4 whistles.Open lid after pressure releases by itself.Check if the chickpeas are soft but not mushy.Mash coarsely a handful of chickpeas with a masher and mix.

Add 1 tbsp oil in a pan.Lightly saute paneer till light brown flipping when one side done.In the remaining oil saute chopped methi leaves with 1/4 th tsp salt and set aside. Puree 2 chopped tomatoes in a blender.

Heat 2 tbsp more oil in a pan or wok.Sprinkle cumin and carom (ajwain) seeds.When they splutter,add chopped onion.Sprinkle little salt and saute till translucent.Add tomato puree, ginger garlic paste and the onion green chilli paste.Add 1/4 th tsp sugar to balance the tartness of tomatoes.Saute till the raw smell of onion,ginger garlic is reduced and oil oozes out.Add the boiled chana /chole alongwith the water.Discard bay leaf and mash the red chilli.

Add turmeric,Kashmiri Red Chilli Powder,coriander powder,Chana Masala and salt to taste. Cook in medium flame for 5 minutes. Now add fresh cream and sautéed fenugreek leaves.Mix and add half cup more water if needed.Boil on high flame for 2 minutes.

Now add the sautéed paneer cubes.Gently mix and simmer for 2-3 minutes. Add fresh cream or malai.Sprinkle garam masala and mix.Adjust gravy according to need. In a tadka pan heat 1 tsp ghee.Add ginger julienne and saute.Sprinkle 1/2 tsp Kashmiri Red Chilli Powder and switch off flame.Immediately pour this oil over the cooked Chole Paneer Methi and garnish with chopped coriander and fresh cream.Serve hot, a delicious and unique Chole Paneer Methi Malai dish at parties or for a special meal.
