Ingredients

  1. 300 gmWhite Mushroom 🍄 { washed & chopped }
  2. 20almonds
  3. 9half’s walnuts
  4. 5cashew nuts
  5. 1medium onion chopped
  6. 1green chili chopped
  7. 1 tbspginger garlic paste
  8. 1 tspgaram masala
  9. 1 tspjeera powder
  10. as requiredSalt to taste
  11. 1 tbspghee
  12. as requiredOil / ghee for shallow fry
  13. For Kesar Paratha
  14. 1/2 cupwheat flour
  15. 1/4 tspcardamom powder
  16. 1/2 tspground sugar
  17. 1 tbspnut powder { which you make for kabab }
  18. some kesar diluted in hot milk cup milk Ghee

Steps

  1. 1

    In a pan dry roast nuts cool completely & grind in a powder

    In a pan heat ghee add chopped onion,salt & sauté it

    Now add chopped green chillies, ginger garlic paste and saute it till the raw flavor disappears

    Now add chopped mushrooms and sauté to cook until all the water has evaporated.

    Add garam masala powder,cumin powder and saute it.
    Now switch off the flame ;cool it and blend this into a paste and take into a bowl.
    Adjust the consistency by adding the nuts powder { keep 1 tbsp for Paratha & rest all put in mushroom 🍄 paste }

    Oil your palms and make small balls or kebab's with that mixture.
    Heat the pan by adding oil to it and place the kebabs in pan to fry them and cook both the sides; very carefully because it’s very soft

    Once they are cooked plate it them
    and serve hot with mint chutney and mini Kesar parathas.

    For Kesar Paratha ~

    Mix everything together and knead in a smooth dough. Add some water or milk to
    knead dough if needed

    Roll into small chapatis and cook in little ghee from both sides

    Serve these kabab on the Kesar parathas with some green chutney & onion 🧅 rings

    Shallow fry Galouti in ghee for the best results.

    Allow the mushroom mix to cool completely before blend them.
