In a pan dry roast nuts cool completely & grind in a powder
In a pan heat ghee add chopped onion,salt & sauté it
Now add chopped green chillies, ginger garlic paste and saute it till the raw flavor disappears

Now add chopped mushrooms and sauté to cook until all the water has evaporated.
Add garam masala powder,cumin powder and saute it.
Now switch off the flame ;cool it and blend this into a paste and take into a bowl.
Adjust the consistency by adding the nuts powder { keep 1 tbsp for Paratha & rest all put in mushroom 🍄 paste } - 3
Oil your palms and make small balls or kebab's with that mixture.
Heat the pan by adding oil to it and place the kebabs in pan to fry them and cook both the sides; very carefully because it’s very softOnce they are cooked plate it them
and serve hot with mint chutney and mini Kesar parathas. - 4
For Kesar Paratha ~
Mix everything together and knead in a smooth dough. Add some water or milk to
knead dough if neededRoll into small chapatis and cook in little ghee from both sides
Serve these kabab on the Kesar parathas with some green chutney & onion 🧅 rings

Shallow fry Galouti in ghee for the best results.
Allow the mushroom mix to cool completely before blend them.
