This is a popular Spanish dish usually served as tapas, super simple and relatively quick to make just have to dehydrate and then preserve.
This can be served with cheese’s, chutney and various different meats, on top of bread or crackers.

Halve your tomatoes then dehydrate partially at 65C for upto 6 hours. Basically want them half dry half soft
- 2
Whilst that’s happening you can prep your garlic and chop finely
- 3
Once your tomatoes are dehydrated you can add them all to a mason jar with your chopped garlic and if your using oregano you can put this in now too. Then cover with oil until completely submerged
