Ingredients

6-8 servings
  1. 1 candiced tomatoes & green chiles
  2. 1 cancorn
  3. 1 canchicken
  4. 1 canseasoned black beans
  5. 1medium bag frozen or fresh chopped red onions (about 2 cups)
  6. 1 tbspparsley
  7. 1 tspgarlic salt
  8. 1 tbspcrushed red pepper
  9. 2 tspblack pepper
  10. 2 tsponion powder
  11. 1/3 blockVelveeta (about 3-4oz)
  12. 4 ozcream cheese
  13. 1-2 cupsshredded "Mexican Blend" cheese
  14. To taste:
  15. Chili garlic sauce
  16. Frank's red hot sauce
  17. Siracha ranch dressing

Cooking Instructions

    Drain canned corn, black beans, and chiles & tomatoes. Combine in a large pot together with chopped onions. Add dried spices & toss to combine well over medium heat.

    Next, drain canned chicken and add to veggies. Shred a bit with a fork. Mix together thoroughly.

    Then, cut cream cheese & Velveeta cheese into cubes and add to mixture along with shredded cheese. Continue to cook over medium heat until cheeses are melting. Stirring often.

    Finally, add wet ingredients (sauces) to taste and mix to combine well. Reduce heat to low, cover, and let simmer about 20-30 mins.

    Serve with tortilla chips, in burritos, or any way you like! Enjoy!
