Keep some ponk aside and grind the rest of it coarsely.
Grind the soaked chana dal with ginger and chilli.
In a mixing bowl add grinded chana dal, grinded ponk, add the whole ponk that we had kept aside. - 2
Add turmeric powder,asafoetida, baking soda, salt and finely chopped coriander leaves.
Mix well. - 3
Add gram flour (besan)
Make sure the batter binds well, if it doesn’t bind you can add more gram flour.
Heat oil in a kadhai and add 1 tablespoon of hot oil to the batter and mix well. This will make our vadas crispy. - 4
Make vadas and deep fry them. Fry them well from all sides and remove them once they turn golden brown.
Surti Ponk Vada is ready.
