Methi Bhindi Masala is a simple Vegetarian dish made by me for meals at home. Simple yet filling and comfort food for everyone by all means. It's quite a likeable one too.
The best part is that it goes well alongside Rice and Rotis both.
It's will be loved by all including the children too. Made easily with a few simple pantry staples, it's a bliss. And Fenugreek Greens gets incorporated into the dish so very well that children can't find it out. They definitely wouldn't say no to it
It makes for a good Tiffin box idea too. Can be relished with Phulkas and Parathas too. Overall a perfect Lunchbox idea for everyone who doesn't like to have outside food and prefer simple homemade food.
A lovely looking Curry that's simple yet flavourful and filling. It is made with a few spices along with Tomatoes and Onions and is absolutely perfect for a family meal on any day. Not only with Rice, it tastes yummy with Rotis as well.
And since it's a semi dry one, it is good on it's own.

In a pan, heat some Oil and add the Ginger garlic paste. Saute it for a few seconds and then add in the Asafoetida and the other ingredients as well. Saute Onions on a low heat with all the powdered spices until done. Now add the chopped Tomatoes and cook until soft and mushy. Also add chopped Green chillies. And then finally add in the Bhindi pieces.

Cover and cook on a low flame for 20 minutes. Do not over cook it. It should retain the crunch. It will be done easily. If desired cook it for a little longer duration if you prefer it to be too soft. Otherwise it is done in no time at all.

Garnish with chopped Coriander Leaves and serve hot as a delicious side dish to many an important meals. Yum! Enjoy!
