Plantain cake

I had some left over over ripe plantains and didn't know what to do with them. My little daughter suggested that I make plantain cake same way that I make banana cake/ bread. I followed same procedure and the plantain cake turned out to be even more sweeter than the banana cake .

I had some left over over ripe plantains and didn't know what to do with them. My little daughter suggested that I make plantain cake same way that I make banana cake/ bread. I followed same procedure and the plantain cake turned out to be even more sweeter than the banana cake .

In your mixing bowl start by mashing the over ripe plantains very well.

Add the yoghurt,oil and eggs and whisk very well to combine. Add the sugar and mix again.

Lastly add the flour, vanilla and baking powder. Mix and transfer into a greased baking pan. Make sure not to over mix.

Bake in a pre-heated oven until golden brown, depending on the type of gas cooker you're using. I baked mine for 50 mins,on low heat.

Enjoy with any black tea,most especially Ahmad tea(strawberry flavor😋😋). You can decorate with some honey or any syrup of choice.Enjoy!

You can substitute yoghurt with either fresh milk or evaporated milk. You can also substitute white sugar with brown sugar.
