Ingredients

20 minutes
4 servings
  • 1/2 kgSpinach leaves
    Andhra style daal dosa / Pesarattu
  • 1 largeOnion chopped
    Super Greens Smoothie
  • 1 tspGinger chopped
  • 1Chopped tomato
  • 1 tspGarlic chopped
  • 2Chopped green chillies
  • 2Boiled / peeled potatoes
  • 1 tablespoonGhee
  • 1 tspMustard seeds
  • 1 tspCumin seeds
  • spicesChilli powder, Cumin powder, coriander powder, salt
  • spicesAamchur powder, fennel powder, kitchen king masala
  • 1 tspLemon juice
  • 1 pinchSugar
  • as requiredChopped coriander leaves to garnish
  • as requiredChapati or steamed rice to serve

Steps

20 minutes
  1. 1

    First, wash and dry spinach leaves. Then blanch them in boiling water for 2 to 3 minutes. Immerse in cold water and then blend to a smooth puree' along with 1 pinch baking soda.
    Note: It retains the green colour. You can make puree without it too.

  2. 2

    Now peel and cut potatoes in medium cubes. Then heat ghee. Add cumin and mustard. When it turns aromatic, add ginger, garlic, chillies, and saute well. Then add onions and stir them till aromatic. Then add chopped tomato and mix well. Sprinkle 1 tablespoon water and mix wel. Add all the spice powders and mix Then add potatoes and stir fry for 5 minutes.

    Then add the spinach puree', salt, sugar, 1/2 cup hot water and mix well. Cook open on low flame for 5 to 7 minutes. Then remove and mix lemon juice.

    Garnish with coriander leaves and serve piping hot with chapattis or steamed Rice. Enjoy.
