This recipe is very simple, and a bastardization of most meringue recipes. It uses simple ingredients and takes very little time from the baker.

Preheat oven to 250 degrees F/120 degrees C. Prepare cookie sheet by lining with parchment paper.

Mix egg whites and sugar. Leave out to heat up to room temperature.

Put the egg white/sugar mixture into a mixing bowl.
Add cream of tartar and mix on high until soft peaks form. - 4
Add mint extract and green food coloring. The amount of green food coloring depends on your preference for color.

Fold in the miniature chocolate chips.

Using two spoons, drop the mixture onto the parchment paper. Leave about an inch between each cookie.

Bake for an hour. Then turn the oven off and leave the cookies in the oven with a closed door for two hours.
