Cut zucchini into even rounds. Heat oil or butter in a pan in a pan and sauté zucchini rounds until almost tender. Add garlic and seasoning, sauté a little longer to desired doneness. Set aside in a serving bowl

To the same pan, add a little oil and fry an egg until the egg white is good but the yoke is stable yet not over cooked

Serve by placing zucchini on one side of the bowl followed by rocket and tomatoes on the other half. Squeeze some lemon juice on the rocket if preferred and finally place the egg last, slit it open with a sharp knife and watch the yoke ooze out
