Ingredients

1/2 cupwater
1/4 cupcider vinegar
1/4 cupfresh basil, chopped
1 envelopenonfat Italian dressing
4boneless chicken breasts, cut 3/4 strips
2med zucchini, 1 inch chunks
1large red pepper, 1 inch chunks
1large onion, 1 inch chunks
12whole mushrooms
2 tspgrated lemon peel and oil

Steps

Mix water, vinegar, basil, lemon peel, oil and dressing mix in bowl

Reserve 1/4 cup marinade, refrigerate

Add chicken to bowl, toss to coat

Refrigerate 4 to 24 hours

Drain, thread skewers, thread mushrooms at end of skewers

Baste with reserved marinade while cooking
