One Pot Chicken & Rice

Ingredients

40 min. (20 for cooking the rice)
2-6 people
  1. 2 lb.boneless, skinless chicken thighs
  2. 2-3 Tbsp.Olive Oil or Vegetable oil
  3. 1-2 tsp.Cumin
  4. 1 Tbsp.Turmeric
  5. 1 dashCayenne pepper
  6. 1-2 tsp.Basil
  7. 1-2 tsp.Oregano
  8. 1 Tbsp.Smoked Paprika
  9. 1/2 tsp.Celery seed
  10. 1/2 tsp.Ground ginger
  11. Salt (it takes more than you think)
  12. 1 Tbsp.Better than Bullion Chicken
  13. 1 canChick Peas or Great Northern Beans
  14. 1 3/4 c.Hot Water
  15. 1 c.Basmati Rice
  16. 2 Tbsp.Butter

Cooking Instructions

40 min. (20 for cooking the rice)

    Cut up the chicken into 1"to 2" pieces.

    Add the oil in a pot with the desired flavorings:
    a. Cumin
    b. Turmeric
    c. Cayenne Pepper
    d. Basil
    e. Oregano
    f. Smoked Paprika
    g. Celery Seed
    h. Ground Ginger
    i. Salt

    Heat the oil over low to medium low heat until you can smell the spices.

    Add the chicken and cook over medium heat until browned.

  5. 5

    Add the chick peas or Great northern beans.

  6. 6

    Mix the Better than Bullion into the hot water. Pour into the pot.

  7. 7

    Add the rice and butter. Bring to a boil.

  8. 8

    Reduce the heat to a simmer, cover, and cook for 15 - 20 minutes, or until the rice is tender.
