Adadiya or also known as Adadiya pak is very popular and traditional Gujarati winter sweet, which is prepared from udad dal flour, edible gum, ghee, spices and dry fruits. These ingredients helps to keep our body warm in cold winter days and also give us energy.
Basically adadiya is famous food of Kutch and Kathiyawad region of Gujarat.
Kutchi adadiya contains more spices. There are several variations in preparation of Adadiya. It can be prepared with sugar, sugar syrup or jaggery. Khoya(dehydrated milk solids) is also added.
I have prepared it with jaggery, which made this healthy sweet more healthier and diabetic friendly.

I have prepared it with jaggery, which made this healthy sweet more healthier and diabetic friendly.
Steps

Mix 1/4 cup ghee in warm 1/4 cup milk. Add this into flour, little by little and prepare crumble like mixture. Press it and cover it for about 15 minutes.

Then sieve the prepared flour,by breaking lumps to get uniform crumbly mixture.

In a thick bottom pan, heat some ghee, fry edible gum until it pops up properly, then remove it and keep it aside. Also fry dry fruits and keep aside.

Now add more ghee and saute the prepared flour on a slow flame, till it becomes pink and turns aromatic.

Then add adadiya masalo, mace powder and soaked saffron, mix well.

Also add fried edible gum and dry fruits. Mix and sauté for 2 minutes and turn off the heat.

Now heat some ghee and jaggery and mix and let it melt and then turn off the heat.

When flour mixture comes to room temperature, add melted jaggery and mix well.

Give the shape of adadiya or you can set it in tray and cut into pieces too.

Note:
1. You can add dry ginger powder, piprimool powder too.
