First wash the brinjal properly...Wipe it with clean clothe... Then cut it into length wise... Once it is done...Keep aside. Now in a bowl combined besan, haldi powder, kashmiri red chilly powder or as needed. It gives color not so spicy...ajwain seeds, roasted cumin powder, black pepper powder and salt as needed.....

Now add enough water. The batter should not be watery. It should be gravy in consistency... Once it is done then keep aside....

Now heat oil in a kadai..Dip the baigan in a batter...Then fry in a shallow flame...till it is fry properly and brown in color

Once it is done.then transfer to a kitchen tissue paper...Once it is done then transfer to a serving plate....Garnish with chopped Coriander leaves.. Ready to serve....for a lunch....
