Vegetable soup
perfect soup for when you clean out your fridge!

Cut the onion and the garlic into small pieces.

I used a frozen carrots and peas mix. But you can use them freshly. Just cut them how you like.

Cut potatoes in small pieces.

First throw the onion in the pot and roast a little with olive oil. Then add your tomatoes, carrots, potatoes and peas and at the end the garlic.

Fry everything a little bit and then add your vegetable broth. (You can also use chicken broth)

Cover and let it simmer on small heat until potatoes are soft enough.

Serve and enjoy!
