Quinoa is a seed from Amaranth family and is rich in fibers and high in protein. These quinoa seeds are almost have zero calories so it's very healthy. Make it in soup aur sandwiches or make khichdi out of it this will be very tasty and healthy. I used these quinoa in making salad with lots of veggies and it comes out super yummy. A perfect cooked quinoa makes every dish tasty so let's prepare a perfect quinoa first.

I had taken 1 cup of quinoa and washed it throughly with water 5-6 times or until the water comes out clean. This is a must do step as quinoa is bitter in taste and washing it throughly the bitterness goes away. Now we have to take just double amount of water as of quinoa. So in a pan take 2 cups of water then add all the spices mentioned above for boiling the quinoa and allow it to boil. Once start boiling add the washed quinoa and mix it. Allow it to boil again then simmer the flame and cover.

Cook it until all the water dries out. It takes 15-17 minutes to be completely done. Once done off the flame and leave it covered for until it's get warm or on room temprature. Quinoa is tasteless by nature so add flavours whichever you want at the time of boiling so that it could absorb all the flavour with water and swell up. You can even boil it with salt only or with salt and black pepper upto you. You can always adjust the spices as per your likes and taste.

For the salad use as many veggies as you like or you have. Simply wash them and dice them or chop them. I had taken the above-mentioned veggies and dice and chop them. In place of cherry tomatoes you can use regular tomatoes and in place of long red chillies you can add red bell peppers or green or of any colour. In place of amchur powder you can use lemon juice also. Adjust spices as per your taste. You can even add more spices in the salad or even make it with salt and black pepper powder only

In a big bowl add boiled quinoa along with all the other ingredients and mix it very well upside down and our healthy, delicious and nutritious quinoa salad with veggies is ready to be served.
