Winter Vegetable Stir fry / Bhaaji

Assemble ingredients

Steam all vegetables upto 50% except capsicum and Onion.

In moderately heated pan / wok add oil allow to heat, add cumin seeds + bay leaf and allow to crackle, then add chopped Onion and sauté till pinkish. Then add ginger + capsicum and sauté for 2-3 minutes till capsicum softens.

Add coriander powder + cumin powder + green chilli + turmeric + 2 tbsp water and sauté for 1-2 minutes.

Add steamed vegetables and mix well. Add Salt + garam masala and sauté for 3-4 minutes.

Add 1/2 cup warm water and stir well, cover and cook for 4-5 minutes under medium flame.

Make a slurry of 1/4 cup water + maida and pour over the vegetable and mix well. Cook further for 3-4 minutes so that all veggies coats well with each other. Dish is done.

Garnish with chopped Coriander and it is ready to serve.

Pair with phulka / paratha and enjoy winters.
