Savoy cabbage with soft boiled eggs and furikake

I came across this Japanese seasoning last year and it was a total game changer. One of my cooking resolutions for 2023 is to eat more veg focussed meals. This was a super simple light supper after an evenings exercise.

I came across this Japanese seasoning last year and it was a total game changer. One of my cooking resolutions for 2023 is to eat more veg focussed meals. This was a super simple light supper after an evenings exercise.
Steps

De-stem the cabbage leave and cut in half lengthways

Then slice the leaves into 2cm thick strips
- 3
Add 50ml of water to a frying pan and place over medium high heat. Add the cabbage and toss and stir

Cook until the water has evaporated and cabbage is al dente adding the leeks just before all the water has gone

Meanwhile place the egg in a pan of boiling water and cook for 6 mins
- 6
Drain, peel and halve the egg.

When all the water has evaporated, cook for 1-2 minutes more. Toss the cabbage and leeks in the soy and sesame oil, place in a serving dish, top with the boiled egg and sprinkle over the Furikake
