Lemon Chicken with Vegetables

Wash the chicken breasts, cut them into cubes, and set aside.

In a large pot, heat the olive oil. When hot, add the onions and vegetables. Sauté, stirring constantly so they don't stick, until well softened.

Once the vegetables are sautéed, remove them from the pot and set aside in a container. Add the chicken to the pot and sauté well until browned.

Return the vegetables to the pot with the chicken. Add the spices and deglaze with white wine.

When the wine has evaporated, add water to cover, then cover the pot with a lid.

When the dish is almost done, add the lemon juice, turn off the heat, and let it sit for 5 minutes before serving.

Serve and enjoy.
