Boil green peas, make paste of green chilli, paste of ginger + cumin seeds + coriander seeds.

In moderately heated pan, add oil, add cumin seeds and allow to crackle, then add hing, then add boiled peas + green chilli paste + salt and sauté for 2-3 minutes, then add coriander cumin paste + haldi and sauté till moisture evaporates completely. Stuffing is ready. During this process mash peas as much as possible, I kept bit grainy.
Alternatively peas can be made into a smooth paste through mixer grinder. - 3
Mix aata / maida + salt+ oil + water as required and make a tight dough.
Extract balls for making Kachori from dough and flatten it. Place 2-3 tbsp of peas right in middle and seal it gently, then roll out slightly to flatten to give shape of Kachori. - 4
Then deep fry Kachoris on both sides till golden brown and Kachoris is ready.

Serve with potato curry and enjoy this winter delight along with a cup of tea.
