Lamington cake from Down Under 🇦🇺 🦘

When I grew up in Australia, lamingtons were everywhere! I always bought them as a treat from bakeries and cafés so until I moved to the UK, I'd never baked them myself! This is a true taste of my Aussie home. They can come with a cream or jam filling, but for me, simple is best. I made this batch with my toddler son, so they're a little messier than usual!

Preheat oven to 180 degrees Celsius. Line a rectangular baking tray with baking paper.

In a bowl beat the butter, sugar and vanilla with an electric mixer then add the eggs one by one. Stir in half the flour, add some milk, then rest of flour and remaining milk. Add mixture to baking tray and bake 30mins.

Once the sponge cake is ready, leave to sit 10mins then turn it upside down on a rack to cool down before going to next step. Ideally 30mins, even the next day if you want to pre-prepare the cake.
*You can also make lamingtons from left over sponge cake, which is how the idea was invented.

In a different bowl sift the icing sugar and cacao, then mix in butter and water till it makes a smooth chocolate liquid. Add more water if its too thick.

Cut the sponge into 10-12 Square pieces. Put coconut on a plate. With a fork dip the sponge cake piece into the chocolate mixture then roll in coconut. Let it sit 1h before eating, even up to 7 days in an airtight container!
