Did you know? Colombia 🇨🇴 has no borders with Nicaragua 🇳🇮. Of course we’d have to follow history and all to explain this, but that’s not the point. This is a story of a beautifully joint effort by my two Colombian and Nicaraguan connects 😉 to create an impeccable plate of food fitting for both their cultures and palates. It was a beautiful thing to watch and since you could not be there to experience this with us, I thought I’d share the recipe

In a frying pan heat oil over medium-high heat until shimmering

Pry open skin to peel PLANTAINS before slicing them into equal sized pieces [atleast 1-inch thick]. Deep fry until softened (you should be able to piece through easily with a fork), but not browned. For this size it should take about 5 minutes per side

Drain plantains on a paper towel and whilst still warm, flatten each piece with the bottom of a saucer or cup. Fry again until crispy and golden yellow (roughly a minute per side). Drain on paper towels and sprinkle with salt while still hot. Set aside as you prepare the other components

To prepare the QUESO FRITO, cut cheese into slices of about an inch all around

Decide whether to deep fry or shallow fry and heat up the required amount of oil over high heat (feel free to use the same oil used for the plantains)

Fry cheese for 2-3 minutes on each side, with edges slightly browning (do not be tempted to over fry otherwise they will be chewy and tough)

Drain fried cheese on paper towels are you prepare the toppings

To make the GUACAMOLE scoop fresh avocado into a bowl, mash into a chunky dip with a fork. Stir in the onions, lemon juice, cilantro, tomato and salt. Refrigerate while you make the salsa

For the SALSA, combine all required ingredients to preference

ASSEMBLE snack by placing friend plantains at the bottom, followed by the fried cheese and topped with either guacamole or salsa
