Ingredients

Serves 4 servings
  • 4 cupscooked rice (about 600 grams)
  • 9 ozpeeled shrimp (about 250 grams)
  • 5egg yolks
  • 6 tablespoonslight soy sauce
  • 5 stalksgreen onions, finely chopped
  • Vegetable oil
  • 1.75 ozsnow peas, sliced (about 50 grams)
  • 2yellow chili peppers, finely chopped
  • 5.25 ozbean sprouts (about 150 grams)
  • 1.75 ozcornstarch (about 50 grams)
  • 1 teaspoonsesame seeds
  • 1 tablespoonsesame oil
  • 1 tablespoonoyster sauce
  • 1 tablespoonhoisin sauce
  • 1 tablespoonminced garlic
  • 1 tablespoongarlic juice
  • Salt and pepper to taste

    Prepare the rice, preferably a day ahead. Do not add salt, garlic, or any seasoning.

  2. 2

    In a skillet, add the beaten egg yolks with 1 teaspoon of cornstarch dissolved in water, green onions, ginger juice, and oyster sauce.

  3. 3

    Sauté or flambé the shrimp, seasoned with salt and pepper, in butter and oil until smoky. Add a splash of pisco if desired. Set aside.

  4. 4

    Add the rice to a wok and stir to break up any clumps. Add soy sauce, oyster sauce, hoisin sauce, and a pinch of sugar. Mix well. Add the green onions at the end.

  5. 5

    Stir-fry to brown the rice. Adjust salt if needed, add the shrimp, and mix. Finally, add the green onions, sesame oil, and sesame seeds.

  6. 6

    Cut the egg omelet into strips and place them on top of the dish.
