Delicious rice-based dish, seasoned with Asian flavors. Similar to arroz chaufa, but with a creamier texture.

Prepare the rice, preferably a day ahead. Do not add salt, garlic, or any seasoning.

In a skillet, add the beaten egg yolks with 1 teaspoon of cornstarch dissolved in water, green onions, ginger juice, and oyster sauce.

Sauté or flambé the shrimp, seasoned with salt and pepper, in butter and oil until smoky. Add a splash of pisco if desired. Set aside.

Add the rice to a wok and stir to break up any clumps. Add soy sauce, oyster sauce, hoisin sauce, and a pinch of sugar. Mix well. Add the green onions at the end.

Stir-fry to brown the rice. Adjust salt if needed, add the shrimp, and mix. Finally, add the green onions, sesame oil, and sesame seeds.

Cut the egg omelet into strips and place them on top of the dish.
