Wylie Dufresne's Scrambled Egg Sandwich

Ingredients

10 minutes
2 sandwiches
  1. 4large eggs
  2. 1small pinch cayenne pepper
  3. Kosher Salt
  4. 2 TablespoonsUnsalted Butter
  5. 3 TablespoonsCream Cheese
  6. 4 SlicesAmerican Cheese
  7. 4Thick Slices Martin's Potato Bread (or other bread)
  8. Unsalted Butter (for pan)

Cooking Instructions

10 minutes
  1. 1

    Whisk eggs and cayenne in small bowl and season generously with salt

  2. 2

    Heat butter in a medium sauce pan over medium heat. As butter begins to foam, add eggs and cook, whisking constantly until they have set in small curds and are starting to look dry (about 1 minute). Remove eggs from heat and whisk in the cream cheese. Remove eggs from pan and place in a bowl.

    Divide cheese between two slices of bread and top with egg mixture, close up sandwiches (will make 2 sandwiches - receive can be doubled to make 4 sandwiches)

    Heat a dry large skillet over medium/low and brush very lightly with butter. Toast sandwiches until golden brown (~ 3 minutes per side)
