Steps

Boil water, add noodles in it, boil till 80% boiled, strain it, transfer in a bowl, let it cool. Add 2 tbsp cornflour on noodles & coat well.

Heat oil in a pan add noodles into the oil & fry until it turns golden & crispy. Transfer them to a plate & let them cool.

Heat oil in a pan add chopped ginger, chopped garlic, chopped green chilli & roast well on high flame for 30 seconds. Add chopped carrot, chopped capsicum, chopped onion, chopped beans, chopped cabbage & roast well for 1 minute on medium flame.

Now add soya sauce, vinegar, chilli sauce, tomato ketchup & mix well.

Now add salt as per taste, black pepper powder & mix well.

Now add water, mix well & boil.

Take a bowl add 1tbsp cornflour & 1 tbsp of water & mix well, while soup start boiling, little by little add cornflour slurry & mix well & cook for 2 minutes. Turn off the flame, Monchow Soup is ready.

Take a bowl & serve Monchow Soup, garnish with spring onion greens, add fried noodles on top of Monchow Soup.
