Manchurian Balls:-
In a mixing bowl, add all the ingredients, mix well. Using your fingers combine them all together. Use very little water to make a thick batter with more veggies than flours. Grease your palm; take about 3- tbsp batter to make balls.
Over medium heat, in a kadhai, heat oil for deep frying. I used peanut oil as it has high smoking point and also gives a nutty flavor.
Fry manchurian balls till golden brown and crispy - 4
Remove from the oil, place the fried balls on a paper towel. Keep aside for further use.

Gravy:- Over medium heat in a heavy bottomed saucepan or kadai, add oil. when the oil is hot enough add ginger, garlic and green chilies, mix well and cook for 2 minutes.
Add soy sauce, vinegar, sugar and vegetable stock, mix well.
Add spring onion greens and coriander leaves, mix well and cook for 2-3 minutes.
Add cornstarch slurry, mix well and let it come to boil.
Add Manchurian balls, mix well and let the gravy thicken - 6
Transfer to a serving bowl Serve hot with rice, cjappathi, parantha
