  • For Manchurian Balls
  • 1/4 cupSpring Onion Greens, finely chopped
  • 1 cupCabbage, finely chopped
  • 1 cBok choy
  • 1 cupCarrots, finely chopped
  • 1 cgreen bell pepper, finely chopped
  • 1 cpotato, steam cooked, peeled and grated
  • 1/2 conion, finely chopped
  • 2green chiles, finely chopped
  • 1 tbspsoy sauce
  • 1inch-Ginger, finely chopped Salt to taste
  • 1 tspWhite Pepper powder
  • 1 cupall purpose Flour
  • 2 tbspCornstarch
  • Salt to taste
  • Vegetable Oil for deep frying
  • For Gravy
  • 2 tbspOil
  • 1inch-Ginger, finely chopped
  • 3-4Garlic Cloves, finely chopped
  • 2-3Green Chillies, finely chopped
  • 1/2 tspSoy Sauce
  • 1/2 tspvinegar
  • 1/2 tspsugar
  • Vegetable Stock, as required
  • 1/4 cupSpring Onion Greens, finely chopped
  • 1/4 cupCoriander Leaves, finely chopped
  • 1 tbspCornstarch slurry
  • Prepared Manchurian Balls

    Make a checklist; keep the required ingredients close by

    Keep the required ingredients close by

    Manchurian Balls:-
    In a mixing bowl, add all the ingredients, mix well. Using your fingers combine them all together. Use very little water to make a thick batter with more veggies than flours. Grease your palm; take about 3- tbsp batter to make balls.
    Over medium heat, in a kadhai, heat oil for deep frying. I used peanut oil as it has high smoking point and also gives a nutty flavor.
    Fry manchurian balls till golden brown and crispy

    Remove from the oil, place the fried balls on a paper towel. Keep aside for further use.

    Gravy:- Over medium heat in a heavy bottomed saucepan or kadai, add oil. when the oil is hot enough add ginger, garlic and green chilies, mix well and cook for 2 minutes.
    Add soy sauce, vinegar, sugar and vegetable stock, mix well.
    Add spring onion greens and coriander leaves, mix well and cook for 2-3 minutes.
    Add cornstarch slurry, mix well and let it come to boil.
    Add Manchurian balls, mix well and let the gravy thicken

    Transfer to a serving bowl Serve hot with rice, cjappathi, parantha
