Mangalore buns are sweet fried pooris made with banana,flour and sugar.This is a special dish from the Mangalore region of Karnataka.

In a blender jar add chopped banana,sugar and curd.Just make a puree of this mixture without adding water.Then transfer it to a big plate.

I have done this recipe as an instant version where we do not need to rest the dough for 4 to 5 hours.If you don't want instant version then add a pinch of baking soda and knead the dough and rest it for 4 to 5 hours.Here add 2tsp of baking powder to banana puree and mix it.Add jeera,add 2 cups of maida,pinch of salt and ghee.Knead it to a soft dough.If you find it too sticky add 2tbsp maida and knead the dough.

As the dough will be sticky apply oil on your palm and knead the dough.Make small balls of the dough and roll it to medium thick poori. As dough will be sticky apply oil on board and roller before rolling poori.

Heat oil for frying pooris.The flame should be medium to medium high for frying pooris.When oil becomes medium hot,gently slid the poori in the oil.After the poori puffs up and become golden from one side then turn over gently using slotted spatula.Fry the other side until golden and crisp.Turn over a few times for even cooking and colour.

Remove the poori with slotted spatula and drain on paper napkins to remove excess oil.Fry remaining pooris the same way.

Serve hot or warm Delicious Mangalore Buns.
