Steps

    Keep storing the malai(The film that forms after milk is boiled) in a container in the freezer section of the freeze.

    Take out and keep outside for a day. Next day grind with cold water until the butter cuddles on top.

    Heat the butter in pan until the ghee is ready. Below are the stages. If you are making in buffalo milk, it would look whitish instead of yellowish.
    Keep stirring occasionally so that the solids don’t stick to the bottom of the pan.

    Sieve the ghee in a glass jar. The ghee remains as it is for years.

    Don’t throw the residue. You can it that. Either just have alongside plain rice or mix with sugar and have. I like the brown crumbles with mur mura/ puffed rice and little jaggery.

  6. 6

    Don’t throw the water of the butter, boil that, add little vinegar or lemon juice, the cheese will be separated. Sieve in a cloth. Use this as paneer/Chhena. I made Chhenapoda out of this Chhena. You can find my Chhenapoda recipe here -

    Again don’t throw the sieved water, this can be used to Knead Atta, use in daal, or make kadhi by mixing some curd.
