Coriander Peanuts Chutney is a flavourful chutney which is made using fresh coriander leaves (cilantro), roasted peanuts and yogurt, tamarind pulp and few spices.The taste is nutty, tangy , refreshing and a beautiful green colour to it. This chutney pairs well with samosas, cutlets, fritters,sandwiches,dhokla, tandoori chicken bites and other snacks.There was some leftover coriander leaves in my fridge.As these leaves cannot be stored for long, so thought of making chutney.The addition of lemon juice, tamarind paste,yogurt, salt and sugar along with spices helps cilantro to retain its flavor and colour and can be refrigerated for 4-5 days in an airtight container in the refrigerator.

Combine all ingredients in a blender. Add yogurt.Blend until smooth. Gradually add water as needed to blend.The chutney should be thick and creamy.

This is a versatile chutney that can be served with various Indian snacks like samosas, cutlets,dosa,idli, dhokla and even with tandoori chicken bites etc.The combination of peanuts and curd along with cilantro gives a rich creamy texture,while the spices add a flavourful kick.Garnish with chopped coriander and serve chilled with your favorite snack.
