Firstly wash and rinse basmati rice and soak in water for 20 minutes, cook basmati rice up to 90% and keep aside.

Now heat up sauce pan add in ghee, add whole garam masala ingredients saute for a minute,add onion slices, saute it until translucent, add all other masala powder ingredients one by one and saute for 2minutes, add tomatoes and lemon juice..cook until tomatoes becomes mushy, add in chopped vegetables.

Mix well, add in salt according to taste add 1/4cup of water cook until vegetables are almost done, now in a heavy-bottomed deep saucepan..spread the rice layer on top of that spread cooked vegetable masala layer, and repeat the same again with the rice layer on top sprinkle saffron milk, cover the lid and cook on low flame for 6-7 minutes.

Take out the lid, garnish with chopped coriander leaves and serve hot with raita/pickle.enjoy
