A very quick and easy way to use up some of that leftover meat.

Ingredients

1-2 servings
  1. 1 cupleftover pot roast, shredded
  2. 2 cupswater
  3. 1 packagebeef flavored instant Ramen noodles with flavor packet
  4. 2 slicesAmerican cheese
  5. 1/2 cupfrozen corn, carrots and/or peas (optional)
  6. 1/2 tspbutter
  7. Hot sauce to taste (optional)

Cooking Instructions

    Warm pot roast in the microwave until heated through, about 1 minute.

    Boil water and add ramen noodles. Add vegetables if using. Cook 3 minutes or according to package directions. Drain about 1/2 of the water.

    In a bowl, add pot roast, American cheese, butter, and beef flavor packet. Add noodles and remaining water and mix well until cheese and butter are melted. Top with hot sauce if desired and serve.
