Ingredients

  1. Skuma
  2. 1 lbGround beef (or beef cubes)
  3. 12 ozfresh or frozen chopped spinach
  4. 12 ozFresh or frozen chopped kale
  5. (Optional) 12 oz fresh or frozen chopped collard greens
  6. 1Red onion
  7. 2 tbsMinced garlic
  8. 1 tbsGinger paste
  9. 2 tspSalt
  10. 3 tbsBeef Royco
  11. 1/4 cupCorn oil
  12. Ugali
  13. 5 cupsWater
  14. 2 1/2 cupsWhite Corn meal
  15. spoonSquared or rounded wooden

Cooking Instructions

    Skuma: Wash fresh or frozen spinach & kale with cold water

  2. 2

    Wash beef and cut beef into cubes.

  3. 3

    Add frying oil to pan and heat. Add chopped onion, ginger, & garlic. Fry for 2 minutes

  4. 4

    Add beef or ground beef and salt it while it’s cooking.

  5. 5

    Once the meat is done cooking add the washed spinach and kale.

  6. 6

    Add Royco and cook for an additional 15 minutes. Lower heat & simmer

  7. 7

    Ugali: Heat water to boil in a medium-small pot.

  8. 8

    Add corn meal in small batches. Turn and cook each batch on high heat. Stop turning once the ugali has formed and is not sticking to your wooden spoon.
