Simple Protein Burrito (Vegan)

This is the burrito I make for before and after training, and sometimes I add cottage cheese to it as well, which is what vegetarians could do. Red salsa also goes well with it, but I usually prefer to eat it like a sandwich.
The three ingredients are:
- Protein source, like seitan (best flavour, most protein), tempeh or tofu 🌱
- Beans in chili sauce, barbecue sauce, or similar 🫘
- Half of a red onion per burrito, could be substituted with a vegetable of your choice, or mushrooms 🧅
This recipe is for the version I made. I also prefer fresh crunchy red onions, but I believe this will be preferred by more people. I hope you enjoy!

Steps
- 1
I like to cut the seitan into strips. Cut the onions into rings and grill them on a grill pan, until they soften up and get a slight golden colour. You can also heat up the beans in a microwave, but this is not essential.
- 2
Remove the onions and put the strips of seitan in. Grill them as well. Add a dash of balsamic vinegar for flavour, and some water as well to prevent it from sticking. Of course, you can use oil too, though I'm trying to avoid it.
- 3
Turn the heat down to low. Let the ingredients cool down for a bit. Then, put them in the centre of the tortilla, season with salt and pepper, and roll into a burrito shape. Do that by folding one end over and under the ingredients, tucking the sides in, and then rolling it tightly together.
- 4
Garnish with dried parsley (or similar). Enjoy your meal!
