Light and buttery biscuits with homemade rhubarb jam! I made this for Valentine’s Day. 🧸💝
Steps

Prepare all the ingredients in the separate bowl. Bring butter to room temperature several hours beforehand.

Cream the unsalted butter to a smooth consistency with a spatula.

Sift the icing sugar and add this to the butter separately for 3-4 times, mix well each time.

Preheat the oven to 170 °C.

Add egg yolks to the bowl and mix with butter using a whisk. Add vanilla essence. I recommend to use an electric hand mixer.

Prepare a piping bag with big star nozzle. Pipe rose shaped biscuits on a baking tray with parchment paper.

Bake it in a preheated oven for 16 mins. Keep the oven heated. Bring the tray out after the 16 mins and apply jam at the centre of the biscuits.

Bake again for 2 mins and let it cool down.
