Ingredients

35 biscuits
  • 140 gUnsalted butter (room temperature)
  • 80 gCane icing sugar
  • 40 g(2.5 eggs) Egg yolks
  • 1 table spoonFresh milk
  • 10 dropsVanilla essence
  • 210 gSieved plain flour
  • Jam (Any jam will do, but please check my following recipe for the homemade Rhubarb jam)

    Prepare all the ingredients in the separate bowl. Bring butter to room temperature several hours beforehand.

    Cream the unsalted butter to a smooth consistency with a spatula.

    Sift the icing sugar and add this to the butter separately for 3-4 times, mix well each time.

    Preheat the oven to 170 °C.

    Add egg yolks to the bowl and mix with butter using a whisk. Add vanilla essence. I recommend to use an electric hand mixer.

    Prepare a piping bag with big star nozzle. Pipe rose shaped biscuits on a baking tray with parchment paper.

    Bake it in a preheated oven for 16 mins. Keep the oven heated. Bring the tray out after the 16 mins and apply jam at the centre of the biscuits.

    Bake again for 2 mins and let it cool down.
