Sooji ia a very versatile ingredient.
I feel any and every relationship, must be "versatile", sweet and simple.
So this valentine's day I wanted to add sooji, a versatile ingredient in my special day dessert... and make a sweet and simple halwa.

Ingredients

15 minutes
3-4 persons
  1. 1 cupsooji
  2. 2 cupsmilk
  3. 3/4 + 1/4 cupsugar (adjust as needed)
  4. 1 pinchsalt
  5. 1/4 cup ghee
  6. as per requirementDry fruits like cashews and kishmish
  7. as requiredSilver wark and cherries for garnish

Steps

  1. 1

    In a big bowl put sooji and milk. Mix. Cover and keep aside.

  2. 2

    Next place a pan. Put 3/4 th cup granulated sugar and ghee. Switch the heat on and let sugar caramelize to get a golden colour. As you get the perfect colour, add the sooji milk mixture. Give a nice gentle mix. Next add the left 1/4 th cup of sugar and mix. Let it cook. Add in vanilla essence and mix
    As it is getting cooked, add in salt and mix. Next add coarsely crushed cashews and mix well.

    As the halwa leaves the sides of the pan, you will know halwa is ready!
    Transfer into a heart mould/ any dish.
    Let it settle and come to room temperature. Decorate with silver wark and cherries. Cut and serve your special dessert!!
