Nothing can get any simpler than this. The combination of the two ingredients used in this dish is so very amazing and it just blends around so perfectly that one cannot stop drooling over this Vegetarian classic. It is the most wanted dish at my house and our family's favourite. And I hope yours too. It's an absolutely amazing one pot dish that is loved by the children and the adults alike.
And how can it be not relished in Winters when it's the most popular Season for it's spectacular array of fresh and healthy Vegetables and Fruits in the Country. Therefore It's a must have one and so even I made it for Breakfast and also for the Lunchbox too. The bursting flavours of freshly done Coriander Greens and it's aroma is just so mesmerising. The colour is so inviting. You will definitely love it with homemade Chapatis or Rotis and even Phulkas.

Ingredients

25-30 minutes
5 servings
  • 200 gmfreshly chopped Coriander Leaves
  • 400 gmboiled and cubed Potatoes
  • 1 tspSalt
  • 2-3 tbspOil
  • 1/2 tspCumin Seeds
  • 1/2 tspGinger Garlic Green Chilli paste
  • 1/8 tspAsafoetida or Hing
  • 1 tspRed Chilli powder
  • 1/2 tspTurmeric powder
  • 1/2 tspDry Mango powder or Amchur
    Sun-dried Mango Powder or Amchur

Steps

25-30 minutes
  1. 1

    Wash and chop the coriander leaves. Wash and pressure cook the potatoes and cut as desired. Alternatively they can be deep fried too. It's totally upto one's own choice.

    In a pan, heat oil and add cumin seeds along ginger garlic green chilli paste. Saute it for a few seconds and then add some of the coriander greens. Saute them for a few seconds and then add the potatoes along with the spices as mentioned. Cover and cook just until 2-3 minutes. That's it.

    Now is the time to add more of the chopped greens. Mix well. Adjust salt and it's all done.

    The dish is all ready to be served at mealtimes alongside rice and rotis or even both. It goes along well with both. Yum! Enjoy!
