Ingredients

2 servings
  1. 2 cupboiled surti kolam rice
  2. 1medium size boiled beetroot
  3. 1-2 tbspfinely chopped green capsicum
  4. Salt to taste as required
  5. 3 tbspghee
  6. 4-5cloves
  7. 1-2 piecescinnamon stick
  8. 1bay leaf
  9. 1 tbspcumin seeds
  10. 1spicy green chillies finely chopped
  11. 1/2" ginger grated
  12. halvesFew cashewnuts
  13. slicesFew almonds
  14. 1/4 tspgaram masala/as per taste
  15. Finely chopped green corainder leaves to garnish
  16. To serve :
  17. Kadhi
  18. slicesWhile onion

Cooking Instructions

    Pressure cook kolam rice with water, salt and few drops of lemon juice. Cool and keep aside.

    Peel and grate boiled beetroot. Peel and grate ginger, chopped green chilli. Assemble all required ingredients in plate.

    In cooking pan add heat ghee. Do tempering of cumin seeds, bay leaf,cloves, cinnamon sticks. Add chopped green chilli, ginger, green capsicum pieces, cashewnuts halves, almonds slices, saute for 2 minutes.

    Add boiled rice, grated beetroot, salt. Mix well. Sprinkle garam masala and mix. Off the flame.

    Transfer it in serving plate. Garnish with chopped coriander leaves.

    Serve/Relish Delicious Hot Beetroot Rice with kadhi and white onion slices.
