Nightshade is abundant in spring. In spring, nightshade is tender and sweet, with large leaves. Wash the nightshade and set aside. Rinse the dried anchovies with water and set aside. Trim the scallion, wash, and cut into sections, then set aside.

Heat oil in a pan, add the dried anchovies and stir-fry until fragrant. Add the white part of the scallion and sauté until aromatic. Add an appropriate amount of water and bring to a boil. Add the nightshade and stir a few times, then add the seasonings and mix well. Remove from heat and serve.
