Dawood Basha Kofta with Vegetable Rice
A complete and quick meal.

Finely chop the onion and squeeze out the juice. Soak the bulgur for 30 minutes before preparing, then squeeze it well. Combine the ground beef, lamb fat, spices, bulgur, salt, and pepper. Mix well and let rest in the refrigerator for 30 minutes.

Shape the mixture into balls, dust lightly with flour, and roll them in a pan with a little oil. Set aside.

In the same pan, sauté a small onion with 2 cloves of garlic. Add the tomato juice, salt, black pepper, and a pinch of sugar. Let it simmer for a bit, then add the kofta balls and cook on low heat until done.

In a pot, melt butter and oil with the turmeric. Add the rice and stir well. Add water, salt, and a pinch of black pepper. Let the rice cook. Sauté the peas with a tablespoon of butter, then add them on top of the rice along with the carrots. Do not stir; let the rice finish cooking. When done, mix the vegetables into the rice and serve with the kofta. Enjoy!
