Jota (Slovenian winter stew)

This typical Slovenian stew is a popular winter dish. It's traditionally made with smoked pork ribs or some other meat, but this recipe will show you how to make a vegetarian version too.
Jota can be cooked with either sauerkraut or pickled turnips. I much prefer the latter, but feel free to substitute the turnips with sauerkraut if they're hard to find in your country.

Soak the beans for 24 hours.

Finely chop the onions.

In a large pot, heat up a generous amount of butter and some olive oil.

Add the onions and sauté them until transparent. Add a bit of water and cook them a bit longer.

Add the garlic to the onions.

Add the paprika and mix.

Add the beans and vegeta and cover well with water. Cook for half an hour.

Peel and wash the potatoes. Chop them into small cubes and add them to the beans, together with the bay leaves, marjoram and black pepper. Add more water if needed and cook for another half an hour.

Chop the tomato into small cubes and strain the turnips.

Add the turnips and tomatoes to the pot. Add more water if needed and cook for another half an hour, or until the beans are cooked through.

Throughout the cooking, make sure that the stew doesn't get too dry by adding more water. It should be fairly thick at the end.

For the vegetarian version you're done now. If you want some meat in it, chop the bacon into small cubes (or whatever other meat you're using), and put it in a frying pan for a few minutes. Add it to the stew, together with the fat it released.

Serve it with some (homemade) bread.
