Preheat oven at 200C/180C fan/ Gas 6. Half then quarter 1 shallot, mix with tomatoes, Oil, Garlic, Thyme, Chili Flakes together into roasting dish. Roast in oven for 15 mins.

Place Feta block in centre of dish, season everything well and bake for a further 20-25 mins, or until the feta has turned golden brown and the tomatoes softened and jammy.

Cook the pasta, retain 100ml of pasta water. Remove dish once ready and discard of the garlic gloves and thyme.

Break up the cheese and tomatoes with a fork and mix well, add retained pasta water and cooked pasta and mix well.

Add fresh basil and mix well until pasta is coated with creamy, cheesy sauce. Season well with salt and black pepper
