Chop all the vegetables.

Deseed and chop tomato.

Slit and deseed the chillies.

Mix together maida and water along with a pinch of salt and pepper.

Make a batter of medium consistency.

Heat oil in a pan.

Add in ginger and garlic and saute for 2 minutes.

Add in potato and carrot and cook for 5 minutes.

Add in onion and capsicum.

Give it a good mix.

Add in all the spices and stir well.

Remove it from flame and leave it to cool.

Add in tomato and mix.

Stuff chillies with the vegetable mixture.

Dip in batter.

Roll in crumbs.

Again dip in batter.

Re-roll in crumbs.

Heat oil in a wok.

Deep fry till light golden.

Serve with chutney.
