Ingredients

  • 1 cupChick Peas (Kabuli Chana) (soaked overnight)
  • 1Onion (finely chopped)
  • 1/2” piece of Ginger (grated)
  • 1 teaspoonGarlic Paste
  • 1/2 tsp.Cumin Seeds
  • 2 tsp.Red Chilli Powder
  • 1/4 tsp.Turmeric Powder
  • 1 tbsp.Coriander Powder
  • 1 tsp.Cumin Powder
  • Salt to taste
  • 2 tsp.Chat masala
  • 2 tsp.Dry Mango Powder
  • 2 tbsp.Cooking Oil
  • 1/2 cupYogurt
  • 2 cupsmaida
  • 1 pinchbaking soda
  • 1 tbsp.ghee or oil
  • Yogurt to knead a dough
  • Salt to taste
  • Oil

Steps

  1. 1

    Boil soaked chic peas with enough water and pinch of salt until soft...
    Heat the oil in a pan, add the cumin seeds.

    When the seeds crackle, add the onion, ginger and garlic and sauté until the onion is golden brown.
    Add the chat masala, red chilli powder, mango powder, turmeric powder, coriander powder, cumin powder and salt and saute for another minute.

    Add the yogurt and saute for 2 minutes.

    EAdd the chick peas and 1 cup of water and mix well.

    Simmer for 10 to 15 minutes and set aside.

    For Bhature
    Combine flour, soda, oil and salt in a bowl.
    Add enough yogurt to knead into a soft dough.

    Cover with a wet cloth. Keep aside for 5-6 hours.
    Knead the dough again.
    Divide the dough into 4 equal parts and roll out into circles..

    Deep fry in hot oil until the bhaturas puff up and both sides are golden brown.

    Serve hot with the chole, sliced onion, green chillies, fresh coriander and Raita...
