This is a great lemon garlic butter sauce that can be used on fish, chicken, and most vegetables. If you like lemons, you will love this sauce.

Ingredients

15 minutes
1.5 cups of sauce
  1. 1shallot finely diced
  2. 1jalapeño finely diced (optional for some spice)
  3. 1-2garlic cloves minced
  4. 1/2 cupwhite wine
  5. 8 Tbspcold butter (1 stick)
  6. 1/4 cupfresh lemon juice (about 1 lemon)
  7. 1 tsplemon zest
  8. 1 Tbspfresh parsley chopped
  9. 1 tspcorn starch dissolved in 1 tsp water

Cooking Instructions

    Melt 2 Tbsp butter in a pan on medium heat. Add shallot and jalapeño and cook until soft.

    Add garlic to pan and stir for 30 seconds. Add in wine and reduce by 1/2. Stir in lemon juice and zest.

    Lower heat and stir in remainder of butter, a few Tbsp at a time until all the remaining butter is incorporated. Stir in corn starch to thicken then add the parsley.

    Transfer to blender or food processor to purée. Pour into a serving bowl. You are ready to use. This sauce is great for any fish but can be used on chicken or vegetables. Enjoy!

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
